RED HAT SEI312, a light roast, has a bean origination of Guatemala, Central America. 

Guatemala’s unique geographical landscape with lush highlands plays a vital role in cultivating world-renowned coffee cherries.  These high altitudes allow for fast cherry maturation to enhance the development for more robust and abundance of flavors in each cherry.

What makes this area of Central America so ideal?  The rich, volcanic soil is filled with minerals and nutrients that nourish the plants for rapid growth.  Humidity, temperatures and rainfall create the “perfect” environment for coffee cultivation.  You will find that with this overall geographical diversity this produces a very broad range of profiles for the overall product. Guatemala creates the perfect cherry to where bright acidity is present with fruity notes for a full-bodied taste. Chocolate undertones are found depending on the types of cherries used.

CATM Coffee Co. chose this bean for the simple fact that, Guatemalan coffee, “Tells A Story” of the region that the beans came from just as it is our mission in our own presentation to have our coffee tell our own story through a journey and a destination.

The RED HAT SEI312 is a well-balanced roast with a limited tart acidity.  You will find a refreshing crisp and nutty taste with hints of cocoa left on your palate.  This bean development took a lot of thought as to what needed to happen in the way of experiencing your first cup of coffee.  Like a fine wine the drinker must breathe the brewed aroma and allow your palate to absorb the flavors that will come out and tease your senses.

RED HAT SEI 312 is a heartfelt and passionate blend that encompasses a very special part of the CATM Coffee Co. story.  It is dedicated and inspired by all military members past and present who have held a “specialty experience identifier” code in their own branch of service.
